Perle (German) Pellet Hops
Origin: Germany. Bred at Hüll from English Northern Brewer stock, Perle became extremely popular with German growers and brewers after its release in 1978. Usage: Aroma, but in an excellent year can have high enough alpha content for use as bittering as well. Its combination of delicacy and brightness go well with the clean flavors of European lagers and cold-fermented ales, as well as the yeast character of many Belgian beers. Some brewers also find nontraditional use for its flavors in blends for pale ale and other hoppy warm-fermented styles. Aroma & Flavor Characteristics: Lively and sweet with harmonized suggestions of fresh mint and spice in the nose. On the palate, Perle shows a complex mix of floral and spice with mild to medium intensity. Pilgrim Pellet Hops
Pilgrim is a British dual purpose variety 'high hop' with an alpha acid percentage ranging from 9-13%. Bred at the Hop Research Institute of Wye College, it has the same father as First Gold and Herald. It has performed well as a replacement for other dual hops. It is often compared to Target because of its alpha acid levels. However, higher levels of Humulene and Selinen levels comparable to Challenger give Pilgrim a much hoppier aroma. From early storage trials, stability of the alpha acids in Pilgrim seems to be excellent. Polaris (DE) Pellet Hops
A German aroma hop with a very high alpha acid percentage (18-24%). Released in 2012, Polaris is part of the new wave of flavour hops released by the Hüll Institute. It imparts intense and lingering impressions of wintergreen, menthol, eucalyptus, and green apple candy with a Hallertau-like sweetness and herbal note. Polaris can also exhibit a pungent, exotic spice flavor early in fermentation. With typically very high alpha acid levels and high oil content, Polaris makes its presence known in IPAs, Brettanomyces fermentations, and Belgian styles. Progress (UK) Pellet Hops

Spalt Pellet Hops
