LUSCIOUS can be fermented at different temps depending on your style preference. Ferment it cooler, it can handle it, and put the emphasis on the creaminess and the toasted champagne-like complexity of sur lie ageing. Or crank it up a bit warmer and add in some more tropical notes, your choice. However the magic of LUSCIOUS really happens after fermentation when this yeast goes naturally goes nuclear, implodes and breaks open its cell walls, during a process called autolysis. Polysaccharides such as mannoproteins are released into the wine... and man, it's all about those mannoproteins creating that rich, creamy mouthfeel that so many Chardonnay drinkers seek out. The silky richness is emphasized even futher by sur lie aging, aging on clean lees for a period of time, in either tank or barrel. Being a low producer of SO2 it is naturally great candiate for later malo-lactic fermentations. Now that we have painted a picture try putting this marketing wizardry on your next label "The 10-40w viscosity of this wine is due to it being loaded with mannoproteins from the guts of exploded yeast cells". Maybe leave us out of the wine marketing department but we do know a winning yeast when we taste it. #1 for this style of Chardonnay but also a top choice for Viognier and other whites. Optimal Fermentation Temp: 55–68°F Start Time: Average Alcohol Tolerance: 14%+ Nitrogen Demand: Average Production of volatile acidity: Average Production of H2S: Average Production of SO2: Low Cap/Foaming: low Ease to Ferment with MLF: Good Lees Aging: Best Choice Malic Acid Consumption: High YAN Requirement @ 23 Brix: 245 ppm Proper yeast hydration helps ensure a healthy fermentation. For every gram of yeast, mix .25 g of FermStart yeast nutrient with 25 ml of sterilized tap water between 104–106°F/40–41°C. When water reaches 104°F/40°C, sprinkle yeast into water and stir gently. Allow the slurry to stand undisturbed for 15 minutes and then stir again. For every gram of yeast used add 25 ml of clean must to the yeast slurry and let stand 15–20 minutes. If necessary, use additional must to adjust yeast slurry to within 18°F of must temp before pitching. For a complete nutrient schedule sufficient for most fermentations, add 1.5 g of FermFed DAP Free per gallon of must at the first sign of fermentation and 1 g of FermFed per gallon of must after 1/3 sugar depletion.

    A popular yeast strain with a Berlin lineage that is famous for producing amazing lagers with soft malt character and balanced esters.  Every batch is PCR tested to ensure contamination free yeast.  Dosage:Two sachets are enough to treat a 5–6 gallon batch. When calculating for larger batches, use at a rate of 2.5–4 grams per gallon of wort. We recommend rounding up by one full sachet rather than measuring out the yeast exactly. Direct Pitch or Rehydrate:BERLIN yeast can be direct pitched with great results by sprinkling it onto the surface of the wort in your fermenter. However, proper hydration helps ensure a healthy fermentation and is especially recommended for beer with a starting gravity above 15°P (1.061 SG). To hydrate yeast, first sanitize the yeast pack and a pair of scissors. Boil tap water to sterilize and then cool to 85-95°F (29-35°C). Use 10 grams (0.35 oz) of water per gram of yeast. Sprinkle the yeast onto the water, allow the slurry to stand undisturbed for 20 minutes, and then swirl. Use small amounts of wort to adjust the temperature of the slurry to within 10°F (6°C) of the wort temp before pitching. Ferment between 54-62°F (12-17°C). A Quick Overview – Wine Analysis Procedures with the SC-300: Easy SO2 Test Press the power button, change to SO2 mode and press enter. Attach SO2 electrode. Draw up 5 mL of titrant into the syringe and place 25 mL of wine in beaker. Add ~2 mL of the acidifier and ~2 mL of the reactant to wine. Place and hold the SO2 electrode in the wine sample and swirl beaker. Add titrant from syringe dropwise until 15 second long endpoint signal reached. Multiply the titration volume by 20, the SO2 conversion factor, results in ppm Free SO2. Simple pH Test Attach the pH electrode, set aside storage solution, rinse with DI water and blot gently with a paper towel. Take a 5 mL sample of wine, place it in the beaker. Take a pH reading. Accurate TA Test For the TA test, withdraw 5 mL of the TA Titrant with the syringe. Take 5 mL wine sample and add ~15 mL of deionized water. Put SC-300 into TA mode, place clean pH electrode gently in solution. Add TA Titrant from the syringe dropwise until the endpoint is reached indicated with the visual and audible signals. Record the volume (in mL) of titrant used. One side is connected to the Grainfather, while the other is connected to the cold tap water. The hot wort is then pumped through copper inner coil while the cold water is pumped through the outer in the opposite direction, providing instant cooling and heat exchange. The cooled wort can then be pumped directly into your clean, sterile fermenter. This reduces the chance of contamination as nothing is inserted in the wort, and it is only passing through the wort chiller one single time, going straight to the sterile fermenter where the yeast is added. 6 US Gal of wort can be cooled in as little as 20 minutes.     This Premium Plus low pressure primary regulator has a 15 PSI gauge head for accurate adjustment in low pressure dispensing applications. Many wine and cask conditioned systems use 5 PSI or lower for dispensing and maintaining a low pressure blanket on the wine or beer. For added safety, this model has an integrated pressure relief valve that stops the gas flow if the pressure gets too high (55-65 PSI). Premium Plus regulators come standard with a tamper-evident adjustment screw and bonnet, preventing unauthorized adjustment to gas pressure which can cause service issues.     Brewer's Best Cola Concentrated Extract makes up to 4 gallons of Cola flavored soda. Dosage: 1 Gallon: 1/8 - 1/4 teaspoon of yeast, 1/2 ounce extract, 2 cups of sugar 2 Gallons: 1/4 - 1/2 teaspoon of yeast, 1 ounce extract, 4 cups of sugar 4 Gallons: 1/2 - 1 teaspoon of yeast, 2 ounce extract, 8 cups of sugar Instructions: Dissolve fresh Champagne, wine or beer yeast in a cup of warm water (98F). Let stand 5 minutes or longer to dissolve, mix thoroughly. Shake extract bottle well.  Combine extract and sugar in sufficient warm water to dissolve sugar. Add yeast mixture and warm warm water to bring level of liquid up to correct amount chosen, as indicated in dosages list. Mixture can be tasted. More or less sugar, or extract may be added to suit taste. Fill sanitized bottle within 1 to 2 inches of top. Seal bottle with appropriate cap. Bottle not sealed properly may become flat or sour. Lay bottles on side to check for leaks. Age 3-4 days at room temperature, then move to cooler, dark space. Allow to set for an additional week.  Two-weeks will allow for better flavor. As carbonation develops sediment will appear on the bottom of bottles. When serving, pour carefully to leave sediment behind. Ingredients:  Caramel Color, Water, Natural Flavors, Phosphoric Acid, Gum Arabic, and Sodium Benzoate (as preservative). 2 ounce bottle

With each 8-ounce load of the Infusion Tube, you will be adding only 33% of new oak flavors. The Infusion Tube is a convenient way to add oak incrementally to your neutral barrels without removing barrel heads. Crafted from high quality 304 grade stainless steel, the StaVin Infusion Tube enables the winemaker to control incremental amounts of oak integrated into the wine during fermentation, aging, or prior to bottling.
